Justin has been involved in the family ranch his whole life, but started ranching full time in 2013.
Tell us a little bit about yourself, your family and about your ranch?
Justin and Kayla are high school sweethearts. After getting married they moved to the family ranch in 2004. They are currently raising their 2 kids, Madilyn & Kingston on the ranch as well. Madilyn and Kingston are actively involved in all aspects of the ranch and enjoy getting to work by their father’s side. Kayla works in town as a nurse and while she isn’t as involved in the daily operations on the ranch, she is always sure to have a home cooked meal ready after a long day spent working cattle, calving, or putting up hay. Time at our place is largely spent outdoors. We enjoy hunting, fishing, hiking, and kayaking and it’s such a blessing to have all of these activities available right out our back door.
What do you want consumers to know about the Beef industry?
That we genuinely do care for the animals on our ranch. This goes way beyond just making sure that their daily needs are met with nutrition and water. It’s our job to be sure that the animals are given every chance possible to live a healthy happy life while on our ranch. Every decision that is made for the animals is calculated and researched from vaccines, to reproductive health, to mineral supplementation and feed.
One word to describe your life as a rancher and why?
Endurance- the ability to withstand hardship or adversity- this couldn’t describe a rancher’s lifestyle any better. Ranching isn’t without hardship, nor is it without reward. Heaven knows it’s always full of adversity. Equipment breaks down, cows get out, fences always need fixing, but it’s a wonderful way of life and a fantastic way to raise children and we wouldn’t change it for the world.
Favorite Beef Dish?
Sheet Pan Beef Fajitas- quick, easy, and delicious
For 8 servings
1 lb flank steak
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 red bell pepper, sliced
½ red onion, sliced
olive oil, to taste
salt, to taste
pepper, to taste
chili powder, to taste
garlic powder, to taste
1 teaspoon cumin, to taste
½ lime, juiced
8 whole grain tortillas, warmed
Preheat the oven to 450°F (230°C).
Lay the flank steak in the middle of a baking sheet. Arrange the bell peppers and red onion around it. Drizzle everything with olive oil and season with salt, pepper, chili powder, garlic powder, and cumin.
Using your hands, rub the seasoning into the vegetables, then into the steak. Flip the steak and season the other side.
Squeeze the lime juice over the top of the steak and veggies.
Cook for 12 minutes, or until the meat has reached your desired doneness.
Transfer the steak to a cutting board and let it rest for 10 minutes, then slice it into pieces, going against the grain.
Fill up a warm tortilla with the steak, bell peppers, and onion.
